Paxton & Whitfield’s Baby Stilton is a truly exceptional example of one of England’s most famous cheeses in a convenient smaller size. Paxton & Whitfield Stilton is made by Cropwell Bishop in Nottinghamshire and comprises cheeses that have been graded and chosen to meet the flavour and texture profiles that we have put in place. The Paxton & Whitfield Baby Stilton creates a brilliant spectacle on a cheese board and around the dinner table and is perfectly accompaniment by Port. The milk used to make this Stilton is a blend of morning and evening milk. This is a mature Stilton and therefore has a creamy flavour with a buttery and herby richness that melts in the mouth. A stilton in prime condition such as the Paxton & Whitfield Baby Stilton; has a grey, wrinkly crust and the inside should be creamy yellow with an even spread of blue-green veins. The Paxton & Whitfield Baby Stilton creates a brilliant spectacle on a cheese board and around the dinner table and is perfectly accompaniment by Port. Known as the ‘King of Cheeses’, Stilton originated in the mid-18th Century. Travellers along the Great North Road often stopped at The Bell, a coaching Inn in the village of Stilton where the cheese was first served. Its fame soon spread and came to the attention of Harry Paxton and Charles Whitfield. For over 200 years Paxton & Whitfield has selected exceptional cheeses such as Stilton which today can still only be produced in specific counties of the East Midlands. Thus giving Stilton a Protected Designation of Origin (PDO).
